The Story Behind Omelets Etc

 

Omelets Etc. isn’t just a breakfast spot—it’s a story of passion, perseverance, and family. Founded by Juan and Robin Madera in May 2010, their journey began with a dream and a cozy location on the west side of Colorado Springs, nestled on 8th Street. From the start, they envisioned more than just serving great food; they wanted to build a community—a place where guests felt at home.

 

As word spread and loyal customers grew, so did their ambitions. In May 2017, they opened their second location on South Academy, followed by a third in 2018, strategically placed in the up-and-coming Interquest Parkway area of North Colorado Springs. Most recently, they expanded to Falcon, Colorado, planting roots off Stapleton and Meridian. 

 

A Passion for Hospitality 

 

Juan’s love for food started long before Omelets Etc. Originally from Zacatecas, Mexico, he moved to Denver, Colorado, as a teenager, bringing with him a deep appreciation for bold flavors and authentic cooking. His career began humbly—starting as a dishwasher at a national breakfast chain, but his dedication and skill quickly propelled him up the ranks. From dishwasher to chef, then lead chef to general manager, Juan’s journey ultimately brought him to Colorado Springs through a well-earned promotion. 

 

Robin’s story is equally rich in restaurant culture. Born and raised in Santa Barbara, California, she grew up surrounded by the hospitality industry. Her family’s influence ran deep, from store managers to restaurant owners—including her grandfather, Richard Zarn, who operated the original "Omelettes Etc." in Santa Barbara during the 1970s. She, too, worked at a national breakfast chain in Denver, climbing the ladder from hostess to general manager by the impressive age of 19. It was there that she met Juan, and together, they built both a family and a dream. 

 

A Dream Turned Reality 

 

By 2010, after welcoming their fifth child, Juan and Robin knew it was time to create something of their own. Their passion for food and hospitality led them to take a leap of faith, opening the first Omelets Etc. on 8th Street. The community embraced them, and in return, they created a warm, welcoming space where friendships formed over cups of coffee and plates of homemade comfort food.

 

Now, four locations and eight children later, the Maderas continue to live their dream—one breakfast at a time. More Than Just a Meal Omelets Etc. is more than a place to grab a bite—it's a local institution, a family-run establishment where every guest is treated like a friend. While their menu boasts American breakfast favorites, they’re best known for signature dishes that bring people back time and time again. 

 

Juan’s famous homemade green chile is a standout, crafted with exquisite herbs and spices that honor his Mexican heritage. Their colossal sausage links, specially sourced from a local farm, are another crowd favorite. But beyond the food, it’s the heart behind every dish that sets Omelets Etc. apart. 

 

With a deep commitment to family, community, and quality, Juan and Robin have created something truly special—a place where breakfast feels like home.
